This is my take on an Eaton Mess – really yummy and a nice treat.
6 egg whites
1 teaspoon cream of tartar
1/4 teaspoon salt
1 1/4 cups sugar
200 grams mixed, frozen berries plus 100 grams sugar, for the sauce
Place the egg whites, cream of tartar and salt into mixer (or a bowl and use a hand mixer). Mix for two minutes on medium speed, then add the 1 1/4 cups sugar, one teaspoon at a time, while continuing to mix.
Once all the sugar is added, continue to mix on medium speed until soft peaks form.
Next, pre heat your oven to 120 degrees Celsius/250 degrees Fahrenheit. Place some greaseproof paper on an oven tray and spoon large dollops of the mixture onto the tray. Cook in the oven for 1 hour and 20 minutes then place to one side to cool.
To make the stewed berries, place the mixed berries and 100 grams sugar into a saucepan and warm over medium heat for 10 minutes, stirring occasionally. Place in the refrigerator to cool.
To serve, break apart the meringues and top with the stewed berries (and some whipped cream if you want a really indulgent treat)
